After a career spanning over two and a half decades in the restaurant industry, I’ve witnessed a dramatic change in what and how you’re being served. From order-yourself impersonal kiosks to semi-prepared/fully prepared thaw-heat-and-serve ingredients, REAL food and service are disappearing (like the dodo bird and 8-tracks).
Food excites us, comforts us, and nourishes us. Whether in celebration, honor, reception or mourning, great food and drink are always there (kinda like your relatives at an open-bar wedding).
What’s my secret ingredient? Passion. It’s as important as salt, fat, or spice, and something many others seem to leave out from their recipes.
