My Ideal Meal: Anything comfort food! I love the dishes I grew up with that mom used to make.

Favorite Ingredient(s): I completed my culinary schooling in the southwest (Scottsdale Culinary Institute), so I’d have to say any ingredients southwest related: chipotle peppers, cilantro, cumin, and ancho peppers. But let’s not forget the importance of butter…who can go wrong with butter?

My typical day at Woodfire: There is no such thing as a typical day in the restaurant industry!

How do you keep up with the latest food trends? Who wants to keep up? We are constantly trying to surpass the trends and stay ahead of the curve. We strive for greatness and creativity on a continuing basis. You’re only as good as your last dish.

One thing you wish you could serve but can’t? I would want to bring more bold and spicy flavors to a menu, but you have to be careful in the Midwest. Palates are a bit more sensitive than down south.

Favorite aspect about Woodfire: Family, atmosphere, friends, and the relationships we’ve built in just a brief time in downtown Davenport. Here’s to many more years of memories!
